Sauerkraut pesto may sound unorthodox, but it is super tasty and nutritious, and it is the new Nordic vegetarian. Add in cheese and you have the perfect healthy comfort food.
These nutritious sauerkraut pesto quesadillas are so easy to make. All you do is make the pesto, spread it onto a flat bread, top with cheese and fry. You can add more ingredients if you like. I added marinated artichoke hearts and chilli flakes and I loved the added heat.
Sauerkraut, or surkål in Swedish, is fermented cabbage. Traditionally, fermentation was a method for preserving food. Today it has seen a revival as it offers nutrition and health benefits, and it is good for your guts too.

Makes: 6 small or 3 large quesadillas

Total time: less than 20 – 30 min

INGREDIENTS

Flatbreads 6 small or 3 large
Grated Gruyère cheese (or Cheddar cheese)
Chilli flakes to taste (optional but recommended)
Marinated artichoke hearts (optional)

FOR THE PESTO
100 g sauerkraut
10-15 g flat leaf parsley (or a large handful)
50 g cheddar cheese
Pine nuts (handful)
1 garlic clove
Salt and pepper to taste
100 ml virgin olive oil
Nutmeg ½ teaspoon (optional)

Tips: you don’t have to dispense of the parsley stem if using a food processor.

METHOD

1. Make the pesto in a food processor. Mix the dry ingredients first, then add the oil. Season to taste.

2. Spread the pesto onto the flatbreads, add the chilli flakes and artichoke hearts (optional).

3. Top with the grated cheese, fold in half and fry one by one in a dry cast iron pan or non-stick frying pan. Press down with a flat utensil while cooking. When the cheese is melted and both sides are golden, the quesadillas are ready. Serve immediately.

Tips: Cut into smaller wedges if you want to serve them as a canapé.
